Store in a cool, dry place. Once opened, keep refrigerated and use within 4 weeks.

Directions:Stir-fry 1 can of red curry paste with 400ml of coconut milk until it comes to a boil.Add 500g of chicken and the remaining 400ml of coconut milk. Stir until the chicken is cooked.Add 250g of eggplants and continue stirring until tender.Sprinkle with sweet basil leaves and sliced fresh chilli.Serves 5–6.
