Steamed Buns (Bao) Makes 6 bao buns You will need: ??140g (1 cup + 1 tbsp) Lighthouse Cake, Sponge & Steamed Bun Self Raising Flour ??3.5g (¾ tsp) Lighthouse Yeast + Bread Improver ??30g (1 ½ tbsp) sugar ??80mL (4 tbsp) warm water ??2g (¼ tsp) salt ??20ml (1 tbsp) oil Filling suggestion: ??225g Chinese barbecue pork, finely diced ??1 spring onion, finely sliced ??1 tsp soy sauce ??½ tbsp hoisin sauce ??½ tsp honey ??¼ tsp sesame oil Method: 1. Dissolve yeast and ½ tbsp (10g) of the sugar in the warm (not more than 40°C) water. 2. Mix the measured amounts of flour, salt, oil and remaining sugar into the yeast mixture. Knead the dough on a lightly floured surface for 10 – 15 minutes or until dough is smooth and elastic. Alternatively, use the dough hook attachment of an electric mixer. 3. Shape dough into a ball and place in a lightly greased bowl. Cover with a clean damp tea towel and allow to rest in a warm place for 45
