1. Place 8 lettuce leaves trimmed to form cups on serving plates.
2. Heat oil in a wok or pan and stir-fry 1 clove minced garlic and 1 tbsp chopped onion for 1 minute.
3. Add 300g minced lean pork, ½ tsp salt and ¼ tsp ground black pepper and stir-fry for 2 minutes. Add 2 tbsp water and cover for 1 minute.4. Add 80g diced carrot and 50g diced water chestnuts and stir-fry briefly.5. Stir in 1 packet of Lee Kum Kee Ready Sauce and cook for 2 minutes. Spoon in lettuce cups and garnish with 1 tbsp diced spring onion.
