Chicken Kebab Prep: 10 mins / Cook: 15 mins / Serves 4 700g chicken thigh fillets 1 tbsp canola oil 1 x Continental Seasoning Mix 4 Lebanese bread rounds 3 cups shredded iceberg lettuce 2 tomatoes, sliced ½ red onion, thinly sliced Your favourite sauce, to serve 1. Preheat oven to 220°C. Line a large baking tray with baking paper. 2. Place chicken & oil in a bowl, toss. Sprinkle over seasoning, toss to coat. Place onto prepared tray. Roast for 20-25 mins, turning halfway, until chicken is cooked. Transfer to chopping board, thinly slice. 3. Divide lettuce, tomatoes & onion among Lebanese bread. Top with chicken. Drizzle with your favourite sauce. Roll up bread to enclose filling. Mix it up: 700g eggplant, 3cm cubed. Toss with 3 tbsp oil. Roast for 20 mins, turn halfway.
