Directions
1. Cook "On The Menu" veal tortellini with cheddar cheese as per cooking instructions.
2. Reserve about ½ cup of pasta cooking water, then drain.
3. In a large pan, heat olive oil over medium heat.
4. Add mushrooms and thyme; cook until golden and softened.
5. Add garlic and sauté for 1 minute.
6. Spoon in mascarpone, season with salt and pepper, and simmer 2 minutes.
7. Add cooked tortellini, add ½ cup of pasta water and parmesan; toss gently to coat in the sauce. Add more pasta water if needed.
8. Serve hot topped with extra parmesan and cracked.
