Place mixed fruit, apricot nectar, diced apricots and orange zest in a saucepan and bring to the boil. Reduce heat and simmer for 5 minutes. 2. Stir in butter, sugar and cream and set aside to cool. 3. Add egg, sifted flour, bicarbonate of soda, salt and chopped nuts. 4. Mix well and then turn into a greased and lined loaf pan (24cm x 13cm) and bake for 1 to 1 1/4 hours, or until a skewer inserted into the centre of the loaf comes out clean. 5. Turn onto a wire rack to cool before slicing.
